Quick, Easy and Healthy home-made Muesli
So i’ve made this recipe quite a few times and omg its sooo good! The really great thing about making your own home made muesli (obviously) is that you know exactly what’s going into it and you know your not adding any extra sugars or additives, that most supermarket muesli products always have that ultimately lead to more calories and just annoying guilt- now you can be guilt free and control what goes in the muesli based on your preferences! so these are the ingredients i used and the measurements are a bit off but just go with how much you want to make and how much of what you what to put in it.
(approx 10-15 servings/ 193 calories per serving)
- approx 5 cups of oats (any oats are fine! it doesn’t really make a difference- i used 5 grain porridge from macro )
- 1 cup Almonds
- 1/4 cup pumpkin seeds
- 1/4 cup sunflower seeds
- 1/2 cup raw quinoa seeds
- 2 tbsp ground Flax seeds
- 8 walnut halves
- shredded coconut
- 3-4 tbsp cinnamon
- around 1/2 - 1 cup of honey (depends on how sweet you want it/ and you can use any type of honey- even mix a bit of manuka in their too for an extra boost in nutrients)
- 2 tbsp canola oil
- 1/4 goji berries
Preheat oven 180 degrees or whatever temperature seems right for your oven- not too hot though because we don’t want the muesli to burn (happened to me- bad experience)
So once you’ve got all the ingredients of your choice, mix together the dry ingredients (i.e. oats, nuts & spices) in a large bowl
You have two choices from here you can either be super healthy and just have the mixture dry without being baked (no crunch/no honey/kind of boring but still super yummy) OR on the stove in a hot pot, mix the oil and honey and stir gently until honey is melted to a runny/watery (but not too runny if you get me) consistency
Than pour honey mixture into the dry mixture and toss and turn and mix all together- get grubby and use your hands- to make sure every bit of the dry mixture is lightly coated with the honey.
Cover a large tray in foil or baking paper or whatever- lightly brush it with oil or spray with cooking spray, and spread mixture evenly around tray
Place tray in oven for about 10 mins - take out and stir around the mixture just to make sure every oat is being cooked the equal amount (be wary of the sides because they tend to cook faster than the middle area)- then place back in for approx another 10 mins or until you see the muesli gaining a golden colour
Take out of oven and let it cool for a bit before mixing the dried fruits (in my case it was goji berries cause i had nothing else but you can use apricots or cranberries or sultanas - literally anything you want)
Then just put it in an air tight container and store in your pantry or cupboard
I encourage you guys to try this out!! it sounds like a lot of work but seriously its so quick and easy and you can just use what stuff you have at home! It tastes so good with just yoghurt and fruit or even with like soy milk and almond milk!!
